The Importance of Green Foods
Green foods, including leafy vegetables, grasses and algae – have always been a staple part of the human diet – and that of most mammals on earth. However many of us are eating less and less of these foods, and have often replaced our 'greens' to a great extent with processed foods and a higher dietary intake of sweet foods.
The benefits of green foods are manifold – and often include antioxidant compounds that are hard to source from other foods.
Most green foods are also a source of important vitamins, minerals, trace minerals and amino acids (the ‘building blocks’ of protein).
All green foods also provide the body with a very important plant pigment called chlorophyll and are often rich in enzymes – plant nutrients that are now understood to perform many important functions in the human body.
